Hatchitt Hill Ranch offers $200 and $300 variety boxes, your favorite cuts by the pound, or bulk order. The boxes are half ground beef-half cuts, you can expect around 14-16lbs of beef considering your choice of cuts. The variety boxes include two restaurant-quality steaks such as tenderloin, ribeye, or NY strip; two front quarter steaks, like denver, flat iron, chuck eye; also a selection of roasts, sirloin, ribs or other nice cuts; and delicious Wagyu ground beef. 

Whole, half or quarter beef is available to local restaurants and customers who need larger quantities of beef. Our animals hang around 900lbs so customers can expect around 450lbs of ground beef, cuts and offals. Quarter cows, depending on the final size on the animal, will be in the neighborhood of $1750-$2000. A quarter is roughly 100lbs of half ground beef and half cuts. We can arrange to add on or take away certain items to fulfill picanha, trip tip, brisket and other primals that only come in pairs. Halves and whole cows are a proportional cost- close to 200lbs or 400lbs, respectively.

Steaks range from $8 to $135 a piece, depending on the cut. You can expect 2-4lb roasts, nice smoking size ribs, delicious ossobuco, all the specialty cuts like brisket, tri tip, cheek, skirt, sirloin, picanha- and, of course, “the best burger ever” for $9/lb and also offer a 5lb special for $40. Mix and match as you please, feel free to ask for suggestions if you are a party host for holiday or family event meals.
